These are grown and sun-cured in Papua New Guinea and are also known as “Tahitian” vanilla beans. They are available in much larger quantities than Tahiti-grown beans and are available year-round.
They share many of the same characteristics as Tahiti-grown vanilla beans. For example, they also have a floral, fruity, and sweet flavor profile that blends and combines well with dairy, fruit pastries, and beverages. They too help round off the sharpness of tart fruit such as citrus, passion fruit, and pineapple. Their use in baked goods holds well too, even when baking cookies. Finally, they also enhance the sweetness of foods so that you can cut back on your use of sugar.
The floral and fruity top notes of Papua New Guinea-grown beans are milder than Tahiti-grown beans. Even though they contain more natural vanillin, their flavor is also more nuanced with lingering base notes. They too are becoming a favorite amongst chefs around the world.
A quick tip…
To get to the bean’s full potential after slicing and scraping, we recommend finely chopping the bean halves to maximize its flavor into your recipes. The whole bean is edible and most of the flavor actually comes from the pod itself. Enjoy!
