Whipped White Chocolate Ganache

Looking for a light and creamy cupcake frosting that’s not a buttercream? Try this whipped ganache. Easy to make and super flavorful.

Ingredients

  • 100g Heavy Cream
  • 2g Salt
  • 75g White Chocolate
  • 1/2 tsp Ground Vanilla Beans
  • 200g Heavy Cream, Cold

Instructions

  1. In a small pot over low-medium heat, add 100g heavy cream and salt. Bring to a simmer. Pour hot cream over the white chocolate and add ground vanilla beans.
  2. Using a rubber spatual, gentle mix to combine ensuring all of the chocolate is melted. Using a hand blender, emulsify the mixture on low speed until well combined. While the blender is on, slowly add the 200g of cold cream until combined.
  3. Place plastic wrap on top of the ganache and store in the fridge for at least 4 hours or overnight.
  4. When ready to use, whip in a kitchen aid or with a hand mixer until medium peaks form. Use as desired for cakes and cupcakes.
